dui niycupnues are convinced that store-bought mushrooms just don’t compare with the delicious flavor of the wild varieties. They agree, however, that extreme care must be taken, and warn beginners never to pick mushrooms except with an expert.
Authorities say it simply isn’t true that poisonous mushrooms can be identified by their texture, or by caps that peel easily, or because they have a telltale odor, or wil} turn a silver spoon dark when they are cooked, or by any other simple test.
“When in doubt, throw it out,” is the rule followed by knowledgeable collectors. For anyone not absolutely familiar with the appearance of different species, the rule might be: Restrict your hunting to grocery shelves.
