BE A PROFESSIONAL PICKER
When picking peaches, look for a creamy yellow to gold background color at the stem end which indicates eating quality fruit. Since the red blush on peaches will vary by variety, remember to look for that creamy background color.
A green tint in the background color means the peach is on the immature side. If picked in this condition, the fruit will never have the sweet flavor and juiciness of tree-ripened fruit.
For proper picking, it is best to “palm” peaches and give a slight twist upward. Using the fingers and "pulling” peaches off the tree bruises the fruit and tears the skin. Deterioration is rapid once the skin is torn or
boused. STORAGE
Use tender loving care when handling peaches. They are ready to eat when they feel barely soft. Let firm ones soften at room temperature, uncovered. Store soft ones in the refrigerator. Remember, when buying peaches in quantity, use soft peaches first. Sort carefully since spoilage spreads rapidly.
