Consumers like fresh foods all year round but especially at holiday times. A turkey that has not been fro*en is the accepted definition of “fresh dressed.”

A “fresh dressed” turkey, like any other fresh food, is a perishable food product and must be handled carefully after purchase, says Eleanor L. •Whinnery, marketing specialist with the Virginia Department of Agriculture and Consumer Services. The consumer may want to order the turkey ' and pick it up so there is a minimum of holding time. The temperature for holding a “fresh dressed” turkey should be as close to 32 degrees F. as possible but never over 40 degrees F. If the turkey will not be roasted within one or two days, it would be a wise decision to freeze it.

In making that final decision between purchasing a “fresh dressed” or frozen turkey, consumers need to take into account whether they can purchase that “fresh dressed” turkey at the store at the “right” time to ensure proper handling. Cost may be another factor. “Fresh dressed” turkeys do
