Turkey And Cheddar Chowder

1/4 cup butter or soybean oil margarine 1 cup chopped onion 1/4 cup flour 2 cups turkey or chicken broth 2 cups milk 2 cups shredded sharp Cheddar cheese 2 cups cooked, chopped turkey In a large saucepan over medium high -heat, saute onions in butter until soft but not brown. Sprinkle flour over onions and cook and stir one minute. Add broth and milk. Cook and stir until thickened about 15 minutes. Stir in cheese and turkey and stir just until cheese melts. Makes 6 servings.
