Chopped red and green candied cherries, optional

Cream butter and sugar until light and fluffy. Beat in egg and extracts. Gradually blend in flour. Fill a cookie press with dough. Do not chill dough but use at room temperature. If dough becomes too soft, add 1 or 2 tablespoons flour.

Using the cookie press Christmas tree attachment, form trees on cookie sheets. Sprinkle with multicolored or chocolate shot, or cut-up candied cherries. Bake in preheated 350 degree oven 8 to 10 minutes. Remove to wire racks to cool. Makes about 7 dozen. Cost: About 2 cents apiece.

Note: If this is your first cookie: making Christmas, or the first time you’ve used a cookie press, keep these hints in mind: Place the design attachment number-side up in the cookie press. Pack dough in carefully to avoid air pockets. Stand press on ungreased cookie sheet, turn handle until cookie is formed, then lift press and cookie will fall out.
