Orange-glazed corned beef

3 to 4-lb. corned beef brisket

5 Tbsps. Dijon mustard

1 Tbsp. honey

3 Tbsps. dark brown sugar .

3/4 cup orange marmalade

Place corned beef in large kettle and cover with cold water. Cover and bring to a boil. Reduce heat and simmer, partially covered, 3 to 4 hours or until tender when pierced with a fork. Remove corned beef from water and drain. Blend mustard, honey, brown sugar and marmalade.

Place corned beef in shallow baking pan (a lining of foil will make clean-up easier). Pour glaze over corned beef, making sure sides are well coated. Bake in 400-degree oven for 30 minutes, basting occasionally. When glaze is set, remove corned beef from oven and allow to cool before slicing. Slice as thinly as possible, against the grain. Makes 6 servings.
