John Kotas, sous chef for Patrick O’Connell of The Inn at Little Washington, returned from Mexico recently where he participated in a two-week exchange with one of Mexico’s finest restaurants, Las Mananitas in Cuernavaca. While there, he spent his time observing in the kitchen and working with their chief, Macelino Araujo.
Raised in Chicago, Mr. Kotas began working in professional kitchens at the early age of 16. He uses his career in cooking as a traveling tool as well. The Inn’s International Exchange Program gave him the opportunity to participate in the combination businesspleasure trip.
After visiting with Las Mananitas, Mr. Kotas took the opportunity to experience the lifestyles and culture the way native Mexicans live. Food, of course, as his main priority, and exciting food it was!
