In the small village of Taxco, he dined on Iquana and Quenelas, a prehistoric delicacy. These large, mysterious, prehistoric bugs live in the mountains nearby and are sold at the open air market to be prepared in tacos, salsa and sprinkled over fresh fruit.
“I had to take this once-in-a-lifetime opportunity to try something truly out of the ordinary,” said Mr. Kotas. “The quenelas are extraordinarily high in protein and exceedingly low in calories.”
The Inn has hosted two international visitors in their exchange program recently. Robert Hicks, assistant manager at Gidleigh Park in Devon, England, visited for three weeks in October and worked in the Inn’s dining room with Host Reinhardt Lynch.
Chef Araujo from Las Mananitas spent two weeks apprenticing under Chef O’Connell in the kitchen last August.
