Nutritional information There are many reasons to cook with rice. One-half cup of rice contains only 85 calories. Rice is high in complex carbohydrates and is cholesterol and sodium-free. The following recipes are low in fat. Each demonstrates the versatility of rice. And, several can be prepared in 30 minutes or less. Sesame chicken salad 3 cups cooked rice 2 cups slivered cooked chicken breast 1/4 pound fresh snow peas, trimmed and cut into julienne strips 1 medium cucumber, peeled, seeded, and cut into 1-1/2 x 1/4-inch strips 1 medium red pepper, cut into 11/2 x 1/4-inch strips 1/2 cup sliced green onion, including tops 2 tablespoons sesame seeds, toasted (optional) Sesame dressing Combine all ingredients; stir well. Serve at room temperature or slightly chilled. Serves 6. Sesame dressing 1/4 cup chicken broth 1 tablespoon peanut oil
