3 eggs
1/2 cup milk
1/2 cup raisins
1 /2 cup finely chopped nuts
Heat oven to 350 degrees. Grease and flour loaf pan, 9x5x3 inches. Mix apple and syrup; reserve. Beat baking mix, sugar, cinnamon, eggs and milk in large bowl on low speed, scraping bowl frequently, 30 seconds. Beat on medium speed, scraping bowl occasionally, 3 minutes. Stir in apple mixture, raisins and nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, 55 to 60 minutes. Cool 10 minutes; remove from pan. Cool completely before slicing. Refrigerate any remaining bread.
High Altitude Directions (3500 to 6500 feet): Heat oven to 375 degrees. Decrease baking mix to 2 1/2 cups; add 1/2 cup all-purpose flour. Increase milk to 2 3/ cup. Bake about 50 minutes.

Grilled Apple-Cheddarwiches
4 slices cinnamon-raisin bread
2 teaspoons mayonnaise or salad dressing
4 slices (4 ounces) cheddar cheese
1 small red apple, cored and thinly sliced into 8 rings
1 tablespoon margarine or butter, softened
Spread 2 slices of the bred with the mayonnaise. Layer each slice of bread with one slice of cheese. Top each layered sliced with another slice of bread. Spread outsides of each slice of bread with margarine. Place on a preheated griddle or in a large skillet. Cook over medium-low heat for 6 to 8 minutes, or until golden brown and cheese is melted, turning once. Serve immediately. Yields 2 servings.
