Sugarless Applesauce Cake 1 cup raisins 1 cup diced dried fruit 2 cup water 2 cup all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground nutmeg 1* 1/2 teaspoon ground cinnamon 2 eggs, beaten or egg substitute 1 cup unsweetened applesauce 2 tablespoon liquid sweetener 3/4 cup vegetable oil 1 teaspoon vanilla extract 1/2 cup chopped nuts Combine raisins, fruit and water in a smair saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool. In a large bowl combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and cooked fruit mixture. Stir into dry ingredients and blend thoroughly. Put into a greased 10-9 inch bundt pan. Bake at 350 degrees for 35 to 40 minutes or until cake tests done. Serves 32. Calories, 125; total fat, 7 grams per serving. Note: This cake is acceptable for a diabetic diet.
