ried Okra (West Africa) Makes about JO 1 pound fresh okra, stems and tips trimmed 2 large eggs I cup all-purpose Hour 2/3 cup water 1/2 teaspoons salt 1/4 teaspoon cayenne pepper Vegetable oil for frying Wash okra well, then pat completely, dry with paper towels. In a medium bowl, whisk the eggs well. Add the flour, water, salt, and cayenne, and whisk until smooth. In a large skillet, heal enough oil to reach 1/2 inch up the sides until it is hot but not smoking. (An electric skillet set at 375 degrees works well.) In batches, loss the okra in the batter to coat completely. Fry until golden brown on all sides, turning occasionally, about every four minutes.
