bush beans are well suited to one or two heavy harvests for canning or freezing. Some crops, such as carrots and corn, will produce their full yield all at one time unless you stagger the planting dates or use varieties that mature at different dates.

When choosing vegetables for your garden, pay attention to those high in vitamins. With the short time from garden to table for home grown vegetables, no vitamins will be lost due to long periods of storage.

But it is important that you plan for them to be ripe at the proper type for harvesting and eating. Delaying harvest reduces the quality of the vegetable and will also significantly reduce yield.
