We wish him the best in the and we hope that he wili remember Rappahannock County as a special place. The staff took him out for a farewell lunch last Thursday at The Griffin Tavern in Flint Hill. We all enjoyed a delicious meal and for our dessert we had some homemade Peach ice cream! To make the most of these hot days this week, I would like to share a peach recipe, combining summers finest fruit and vanilla cream to keep you cool. Homemade peach ice cream 1 cup chopped fresh peaches 11/4 cups sugar 2 tbs cornstarch 1/4 tsp. salt 2 cups whole milk 2 large eggs, beaten 1 tbs. vanilla 2 cups half and half Combine the peaches with 1/4 cup of sugar and chill. Combine one cup of sugar with the cornstarch and salt. Blend the milk in gradually. Cook on high until thick, stirring often. Slowly whisk the hot milk mixture into the beaten eggs. Cook until thick and creamy. Chill thoroughly. Add the vanilla and cream to the mixture. Stir in the peaches, then freeze. Makes about 11/2 to 2 quarts. Enjoy! Happy Birthday!
