(Decorated Cake)
This cake is baked for local religious feasts when the balconies of houses are decorated according to tradition.
Bring 1 litre of milk to boil with 50 grams of sugar, the grated rind of one lemon and a pinch of salt. As soon as the milk boils, add 300 grams of rice. When the rice is done and the milk absorbed completely, remove the pan from the flame, add 4 beaten egg- yolks, 100 grams of sugar. 100 grams of sweet almonds and 2 or 3 peeled and chopped bitter almonds. 100 grams of candied citrus peel cut into pieces and 4 stiffly-beaten egg whites. Blend the ingredients well. Butter a pie pan having a diameter of about 25 centimeters, dust it with bread crumbs and put the rice mixture into it. Bake in a medium-hot oven for abo,yj 30 minutes. When cooked, riddle its surface with a toothpick and pour 1 small glassful of a dessert liqueur on it. Leave to cool before serving.
