Aside from these breads, deli items are now available on weekends at the Antique Market, including: Italian subs, pita bread sandwiches (with taco, gyro, vegetarian, or barbecue stuffings), Greek salad and Italian pasta salad. A sweet tooth may be satisfied with either baklava or an eclair filled with Bavarian cream.

In less than five years, the DeFries have turned their bakery in Culpeper into a success. After only one month in Sperryville, they are attracting new and steady customers. What is the key to their success? “We try to be unique,” says Mary. “We’ll do European ethnic breads for holidays. Everything is homemade with no preservatives or additives.”

Referring to their Italian subs, John simply claims: “Nobody makes them like we do-real New York Style.” He notes that, unlike many other makers of the subsandwich, Mary marinates the onions. “People love it,” he says, adding that “one sub even gets marinated mushrooms.” Mary is somewhat surprised by the compliments. She has always assumed that everyone marinates the onions. It’s the only way to make a sub, according to her.

If you require additional proof that John and Mary put in extra effort to please the customer, you will get it. John can lecture on the merits of his and Mary’s ham and cheese sandwich. You would not expect someone to be able to go on at length about a ham and cheese sandwich. After all, a ham and cheese is a ham and cheese, isn’t it? Wrong.

Next time someone serves you one, check the cheese. Is it plain old American cheese between the bread? If so, the sandwich is second rate. John and Mary use only mozzarella in their ham and cheese sandwiches. Apparently it makes a world of difference.
