close to top of glass as possible when ‘pouring — this prevents air bubbles from forming in jelly. Cover hot jelly with thin layer — not more than 1/8 inch — of hot, but not smoking paraffin. A thick layer will pull away from edge of glass as it cools. Be very careful when melting paraffin. Set pan in container — coffee tin or something similar — of water. Never heat it directly over the flame; it can catch fire.

Apple conserve

8 c. thinlv sliced apples (about 3 lbs.)

2 oranges

1-1/2 c. water

5 c. sugar

2Tbsp. lime juice

1 2 c. ginger marmalade

1 c. broken nut meats

Select tart apples; wash, core, pare, and slice thin. Slice unpeeled oranges very' thin. Cut each slice in quarters; remove any seeds. Combine water and sugar in large saucepan; stir over low heat until sugar dissolves. Add lime juice, ginger marmalade and fruits. Bring to a boil and stir often until mixture thickens. If you have a candy thermometer, 220 degrees is where it should be. Stir in nuts. Remove from heat; skim, and ladle into sterilized, hot jelly glasses, or half-pint jars. Paraffin jelly glasses at once or seal lids on jars. Makes 7 (8-oz.) glasses.

Wine jelly

2 c. wine (Sherry’, Sauteme, Port, Muscatel, Burgundy, or Rose)

3 c. sugar

1/2 bottle fruit pectin

Measure wine into top of double boiler. Add sugar; mix well. Place over rapidly boiling water and heat 3 minutes or until sugar is all dissolved, stirring constantly. Remove from water and at once stir in liquid pectin. Pour quickly into sterilized glasses. Paraffin at once. Makes 5 (6oz.) glasses.

Snow topping

Melt 2 bars of paraffin. After pouring a thin layer over top of hot jelly, cool remaining paraffin until it becomes cloudy and until paraffin is foamy and starts to harden. This is no time for chatting — the paraffin hardens quickly and if it becomes too hard you must melt and start over. Spoon whipped paraffin over top of thin layer previously poured on. Heat it up. Makes enough for about 6 standard jelly glasses and with this topping you don’t need to wrap.
