Stir-Fried Green Beans 2 tablespoons vegetable oil 1 clove garlic 2 to 3 cups green beans, washed, stemmed, and cut into 1-inch pieces' 1/2 cup chicken broth 1/2 teaspoon salt 1/2 teaspoon sugar 1 teaspoon cornstarch in 1 tablespoon cold water Heat oil in wok. Brown and discard garlic. Stir-fry green beans for 3 minutes; add chicken broth, salt and sugar. Cover and steam over moderate heat for 3 to 4 minutes, until beans are tender but still bright green and crisp. Stir cornstarch mixture and add it to wokVCook, stirring, until sauce is thickened. Serve at once. Makes 4 servihgs.
