Slightly under-ripe tomatoes will keep longer than ripe ones. If you want under-ripe tomatoes to reach a redder stage, don’t refrigerate them. Mushiness and mealiness are the results when under-ripe tomatoes are refrigerated. The best ripening conditions are warmth (65 to 70 degrees F.) and high humidity.
