If you’re going into the church kitchen or school lunch cafeteria, be sure that the equipment you want will be available on the day you need it. We’ve run into instances where a large coffee maker or spaghetti pot has been “borrowed” and not returned. That can lead to a crisis situation that you don’t want to have to face.
Decide ahead of time how the foods will be served and, just as you do for a party at home, try to do as much as possible before the event. For instance, dish up salads, salad dressing, relish trays, and sauces and have them ready to serve.
Your plans should include a prearranged system for servers to take the food from the kitchen or serving area to the dining room if it’s to be a sit-down dinner. Each waiter or waitress can handle about 10 people.' Think through the traffic patterns and choose the most convenient path for workers and guests alike.
The tables should be set in advance, and as many parts of the menu as possible set in place. The rolls, butter, sugar and creamer, water, and relish trays can all be in place before guests arrive. With check lists in hand, you should not
