Datefiled oatmeal cookies Heidi Eastham 1 cup (1/4L) pitted dates, chopped \I2 cup granulated sugar 1/4 pound butter 1/2 cup brown sugar 11/2 cups flour 1/4 teaspoon baking saoda 1/2 teaspoon salt 11/4 cups oatmeal Preheat the oven to 350 degrees. Put the dates, granulated sugar, and 1/2 cup water in a small pot and cook slowly until thick and smooth, about 15 minutes. Set aside. Cream the butter, then add the brown sugar and mix well. Mix together the flour, baking soda, and salt and add to the butter and brown sugar, beating well. Combine with oatmeal, mixing throughly. Add about 2-4 tablespoons water enough to form the dough into a ball so that it, can be rolled. Refrigerate for about 15 minutes' to faciliate rolling. Roll 1/8 inch thick. Cut into 2-inch rounds. Put them together in pan with the date mixture as a filling and press the edges firmly together. Bake about 15 minutes or unti browned. Yeild: 24 cookies.
