Good Source of Iron
All red meats are good sources of dietary iron. Three ounces of cooked lean lamb offers 17 percent of the adult male RDA for this essential mineral. Maturing and adult females need even more dietary iron, of course, and that identical serving size provides 12.5 percent of the female's RDA for iron. Fifty-seven percent of the iron in lamb is the type scientists call “heme” iron, far more usable in the body than the type of iron found in other foods. Heme iron even makes iron from other sources more usable, as long as they are consumed at the same meal as the heme iron.
Complete Protein
The new, leaner lamb is the same excellent source of high-quality protein we’ve always known lamb to be. For those 175 calories - 6 percent of his average daily caloric intake, remember - the adult male gets 24 grams of protein, or 38 percent of his protein RDA. Every bit of that protein is nutritionally complete, too, with all eight essential amino acids in the proper ratio for human nutrition.
