Especially tasty on the grill and lamb chops, riblets, and cubes for kabobs. Those with rotisserie unit on their grill can also enjoy lamb roasts outdoors. For best results, choose boneless lamb shoulder roasts or boneless leg roasts that are compact and symmetrical in shape.
Lamb outdoors is delicious simply seasoned or, for variety, marinate it before broiling or brush with a favorite sauce or glaze as it cooks.
Lamb Kabobs
1 1/2-2 pounds lean lamb, cut in cubes
select vegetables from the following:
firm fresh tomato wedges or cherry tomatoes
fresh mushroom caps
eggplant cubes
small canned whole potatoes
small canned onions, or fresh onions cut in 1-inch wedges, or raw pearl onions
green pepper, cut in squares
Place meat in a shallow glass dish, pour the desired marinade over meat. Let stand 2 hours at room temperature, turning occasionally, or let stand overnight in the refrigerator.
