Sweet Potato Souffle
Mary Curtis 3 cups boiled-marshed sweet potatoes
1 cup sugar 1/2 teaspoon salt 1/3 stick margarine-melted 2 eggs 1/2 cup milk 1 teaspoon vanilla Mix together and put into greased dish.
Topping
1 cup brown sugar 1 cup chopped nuts 1/3 cup flour 1 cup coconut 1/3 stick margarine-melted
Combine topping and sprinkle over souffle. Bake at 350 degrees for 25 minutes. Yields 6 servings.
