the terrain; large coastal dunes were constructed in the early 18th century to sene as a windbreak against blowing sand, anchored by shrubs with deep-growing and spreading roots. Through the next 50 years or so, the pines were planted, and portions of the forest today are periodically harvested and quickly replaced.
Our actual destination was the famous spa of Eugenie les Bains. The spa is located in'the Adour Valley , and the adjoining hotel and restaurant are run by top French chef Michel G.uerard and his wife. Many of our fellow vacationers were on a weekly "cuisine be minceur” or dietary program which entailed set caloric meals for lunch and dinner and a daily spa program. Since we were only there for two nights, we opted for dinner one night at Michel Guerard’s and our second night we went out to dine at the "Pain d'Adour et Fantasie” in a small village about eight kilometers north in Grenade sur 1’Adour. We spent several lazy hours there eating and sipping wine on the terrace trying to decipher the very extensive menu, much of it dishes of fish caught off the southern coast of France and northern Spain and game from local forests.
