Pork Chops in Cider Casserole 4 to 6 rib or loin pork chops 1-1/4 cups apple cider 2 cups sliced cooked carrots 1/2 cup sliced scallions or parboiled onions 1 teaspoon salt 1/4 cup water Brown chops quickly in a hot broiler, turning once. (Do not cook; merely brown.) Boil apple cider for seven minutes. Place pork chops in a baking dish and add apple cider, cooked carrots, onions, water and salt. Bake, covered, at 400 degrees F for about 45 minutes. During the last few minutes of baking, uncover and let chops brown on top. Yield: 4 to 6 servings
