Spiced Apple Rings

A tasty and colorful accompaniment to pork.

4 small cooking apples

1/3 cup red cinnamon candies

1/4 cup sugar ■

If desired, peel apples. Core and cut crosswise into 1/2-irtch rings. For syrup, in a large skillet combine candies and sugar. Add 2 cups water. Cook and stir over medium heat till liquid boils and candies dissolve. Add apples to syrup. Bring to boiling; reduce heat. Simmer for 10 to 15 minutes or till tender, spooning syrup over apples occasionally. Cool apples in syrup. Cover and store in syrup in the refrigerator up to 1 month. Drain before serving. Makes 6 servings.

Note: If desired, substitute 6 inches stick cinnamon, broken, for the cinnamon candies and increase sugar to 3/4 cup. Cook and stir over medium heat till boiling. Cover and simmer 5 minutes. Add apples to syrup and cook as above.
