apple juice all at once. Cook and stir till bubbly. Cook and stir 1 minute more. To serve, slice between ribs; pass sauce. Serves 8 to 10.

Baked Apples

4 medium cooking apples ■ 1/2 cup raisins, snipped pitted whole dates, or mixed dried fruit bits

2 tablespoons brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/3 cup apple juice or water

Oven 350 degrees

Core apples; peel a strip from the top of each. Place apples in a 2-quart casserole. Combine the raisins, brown sugar, cinnamon, and nutmeg. Spoon into centers of apples. Add apple juice to dish. Bake in a 350 degrees oven for 40 to 45 minutes or till apples are tender, basting occasionally with the cooking liquid. Serve warm with ice cream, light cream, or yogurt, if desired. Serves 4.
