1 1/2 cups finely chopped apple 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1 cup (4 ounces) shredded sharp Cheddar cheese 4 eggs, beaten 1 cup half-and-half1/2 cup biscuit mix Cook sausage until browned, stirring to crumble; drain well. Set aside. Combine apple, cinnamon, nutmeg, cheese, and sausage in a mixing bowl. Spoon into a nine inch quiche dish or deep dish pieplate. Combine eggs, half-and-half, and biscuit mix; mix well. Pour over apple mixture. Bake at 375 degrees for 40 minutes or until set. Yield: one nine inch quiche. Sausage-Apple Balls 1 pound bulk pork sausage 2 cups biscuit mix 1 cup raisins, chopped 1 cup grated unpeeled apple 1/2 cup chopped walnuts 1/2 teaspoon apple pie spice Combine all ingredients, mixing well. Shape into one inch balls. Place on ungreased baking sheets; bake at 350 degrees for 20 minutes or until lightly browned. Yield: about 4 1/2 dozen.
