First of all, Champagne is more accurately called sparkling wine. Sparkling wine refers to any wine that undergoes a secondary fermentation. This secondary fermentation occurs after the grape juice has been turned to wine (the primary fermentation) and the winemaker adds sugar (called a dosage) to the bottle.

The sugar ferments in the bottle and a by-product of the fermentation are the trapped bubbles which give sparkling wine its unique character. This method (you will see it called methode champenoise on the bottle) was developed in the 17th century by the Benedictine Monk Dom Perignon.,
