1 pint dairy sour cream (at room temperature I

Put chocolate chips inlo a mediumsized. heavy bottom pot. Over low heat, gently melt chips, stirring t.o prevent scorching. 'lake pot off heat before chips are completely melted. Continue stir l ine uK heat to finish melting.

Chocolate should he smooth. Let chocolate cool in pot until barely warm.

When chocolate haH cooled, it's time to add the sour cream. Drain away any liquid from the room-temperature sour cream. Put sour cream into a bowl and whisk to soften and lighten. Begin whisking the chocolate (still in the pot) and add the sour cream to the chocolate 1 tablespoon at a time. Whisk well with each addition.

Be sure to add the sour cream to the chocolate in small amounts. Not the reverse. It’s very important.

When all the sour cream has been added to the chocolate, it should he smooth, thick and fluffy. Keep it at room temperature until ready to frost the Yule log. If necessary for easy spreading, you can refrigerate it brietly. But do not chill too long as this frosting will firm and not be easy to spread. If this
