Preparation
Wash mushrooms. Drain. Slice into small pieces. Melt butter in a large pot. Add mushrooms and saute about 5 minutes until soft and juices have been released. Whisk in flour. Cook 2 minutes. Slowly whisk in broth. Cook about 5 minutes to blend flavors. Whisk in half-and-half, light cream or evaporated milk. Add salt and pepper to taste. Heat to steaming. Do not boil.
