“They're from Roy’s Orchard,” beamed Bauman as he proudly pulled out a tray of recently poached Honey Crisp Apples.
Ib those apples, Bauman would add a glaze made from reduced red wine and apple cider and vanilla ice cream that he piped into the core of the apple.
Bauman worked meticulously but with flair as he carefully spooned out the silken brandy-colored liquid and began drizzling a pattern onto the plate.
“There’s no real science or art to this,” said Bauman as he hovered close to the plate but then added softly. “CheflPatrick O’Connell) always told us that it should look like it’s fallen from heaven.”
That it did as he gingerly placed one of the just-right poached apples into the center of his glazed design.
“We could serve them flaming,” said Bauman as he looked toward Barton with a sly smile.
“There wouldn’t be time,” laughed Barton as she nodded with approval after tasting the tender apple with its hint of glaze and coating of vanilla ice cream.
