June is Dairy Month! Did you know one in every four women will suffer from some stage of osteoporosis and a bone fracture by age 65? Osteoporosis is a crippling bone disease, which causes brittleness. It can be the result of a lack of calcium or hormones; however, dietary excesses, i.e., too much vitamin A, vitamin D, protein, alcohol, caffeine, etc., can also cause this disease.
You can do something to prevent osteoporosis. Avoid excesses and consume the average adult’s requirement of at least two glasses of milk each day or an equivalent amount of dairy products. Calcium substitutes should be taken only under the supervision of your physician as they may be dangerous. Recipes using dairy products may be obtained from the American Dairy Association or your local Extension Office.

3 sticks butter, room temperature
8 c. sugar
6 eggs, room temperature
3 c. flour
1 c. sour cream, room temperature
1 tap. vanilla extract
Cream butter and sugar until light and fluffy, about 8 min. Add eggs one at a time, blending well after each addition. Add flour alternately with sour cream, beginning and ending with flour, and mix until smooth. Blend in vanilla. Pour batter into greased and floured 10-inch tube pan. Bake at 325 F. 1 hour and 25 rain, or until cake tester inserted in center comes out clean. Cool in pan 10 minutes before inverting onto cake plate.
