Tomato and Barley Soup Vi cup barley 1 cup chopped onion 2 to 3 ribs celery, including tops, cut up 2 to 3 cups chopped tomatoes 2 tbs. fresh basil or Vi tsp. dried basil 6 cups chicken or vegetable stock Combine all ingredients in a large pot. Bring to a boil and simmer covered for 1 to lVi hours. Makes 6 servings. Variation: 1) add 1 to 2 cups sliced mushrooms, 2) use canned instead of fresh tomatoes and reduce the amount of stock accordingly. IV2 hours. Makes 6 servings.
