The French general Napoleon was convinced successful armies traveled on their stomachs. His chefs provided troops the best camp cuisine available, with fresh fruit and vegetables throughout the growing season.

The general worried constantly about food preservation. How could a general best feed a regiment camping out in Moscow or stuck in a snowstorm, before the spring thaw?

He tinkered with ways of preserving fruits, vegetables and meats. In fact, the French government offered a prize of twelve thousand francs to anybody who could invent such a process.
