In storing store-bought cantaloupes, they ripen best when put in a closed pierced paper bag at room temperature for two to four days. Once ripened, the melon is highly perishable and should be eaten quickly. Ripe cantaloupes should be wrapped in plastic or foil and refrigerated. Cantaloupes will absorb refrigerator odor as well as give off odor that can permeate other foods. This is especially true for cut melons. Do not remove the seeds from a cut melon until ready to eat, as the seeds help keep the flesh moist.
