When purchasing, look for berries that are firm and plump. Ripeness is indicated by a high luster. The color ranges from bright to dark red depending on variety. The most common varieties seen in stores are medium-large, bright red fruit and the smaller, darker-colored berries. A pound of cranberries, fresh or frozen, will yield 4 cups of jellied or whole berry sauce.

Cranberries have good keeping qualities. Fresh, they will keep in the refrigerator for one to four weeks. Frozen, they will keep up to one year. Simply place the unopened bag or box in the freezer.
