1/3 cup margarine
2 cups graham cracker crumbs
1/4 cup packed brown sugar
1 (8-ounce) container non-dairy whipped topping, thawed
Chop cranberries in food processor. Add lemon juice and sweetened condensed milk. Set aside.
Place margarine in a 8 x 8 x 2 dish. Microwave on high 1 minute. Add graham cracker crumbs and sugar; blend well. Remove 1/4 cup of crumb mixture and reserve for topping. Press remaining crumbs firmly in dish. Microwave on high for 2 minutes, rotating dish once.
Pour cranberry mixture over crumb mixture. Microwave on medium-high for 6-6 minutes, rotating dish once. When cooked to room temperature, swirl topping over cranberry layer. Sprinkle reserved crumb mixture on top. Refrigerate. Cut into squares. Yield: 9 servings.
