Strawberry Meringue Cake
1 qt. fresh strawberries
1/4 cup sugar
1 pkg. (2-layer size) yellow cake mix
1-1/3 cups orange juice
4 eggs, separated
1 tsp. grated orange peel
1/4 tsp. cream of tartar
1 cup sugar
2 cups heavy cream, whipped
Set aside a few whole berries for garnish; wash, cap and slice the remaining berries; toss sliced berries with 1/4 cup sugar and set aside while preparing cake. In mixing bowl combine cake mix, orange juice, egg yolks and orange peel; beat 4 minutes with electric mixer. Pour batter into 2 greased and floured 9-inch layer pans; refrigerate while preparing meringue. Beat egg whites with cream of tartar to soft peaks, gradually add 1 cup sugar, beating to glossy peaks. Gently spread meringue evenly over batter in cake pans. Bake at 350 degrees 35 to 40 minutes or until meringue is golden. Cool completely, remove carefully from pans, keeping meringue side up. Spreak 2/3 of the whipped cream over bottom layer; top with strawberry slices; add top cake layer and garnish with rest of whipped cream and reserved whole berries.
