Blueberries Continued from page 10 1 tsp. vanilla 1 ice cube Combine all ingredients in container of electric blender; whirl at low speed until mixture is smooth and frothy. Pour into tall glass. Blueberry Bundt Cake 2-1/4 cups all-purpose flour 1 cup sugar 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 2 eggs, well beaten 1 cup buttermilk 3/4 cup vegetable oil 2 T. frozen orange juice concentrate, thawed 2 cups fresh blueberries 1 cup chopped walnuts In large bowl, combine first 5 ingredients; mix well. In another large bowl, blend eggs, buttermilk, oil and orange juice. Add dry ingredients and mix thoroughly; cafefully fold in berries and nuts. Pour into greased bundt pan; bake at 350 degrees for 45 minutes or until toothpick inserted in center comes out clean. Cool, invert onto cake plate; garnish with whipped cream and berries.
