Some traditional picnic food such as potato salad, macaroni salad, or ham salad have to be handled carefully. These salads must be kept cold. Divide large amounts into smaller containers so that the food will cool quickly all the way through. Food in the center of a large container may remain warm enough to allow bacteria to grow even though the container is in the refrigerator.
When traveling with food, the U.S. Department of Agriculture says that items such as potato salad should start cold and be kept cold in an insulated container with a source of ice.
