At picnics, keep food in insulated containers with the lid on and leave them in the shade, said Sue Templin, home economist with the USD A Meat and Poultry hotline.

A popular method of preparing food in the summer is to grill it. Ms. Templin cautioned against using marinade from a meat dish as a sauce unless the marinade is heated. There is a danger of cross contamination of bacteria from the raw meat into the sauce. Another option would be to save some of the marinade before putting the raw meat in it.
