Color: After identifying the cuts you wish to purchase, look at the beefs appearance in the package. The color of the lean part of the beef should be bright red. Vacuum-packaged beef and the interior of ground beef will have a darker, purplish red color because the meat is not in direct contact with the air. As this beef is exposed to the air, its color turns the familiar bright red.
