1/4 cup chopped pecans

Combine cranberries and sugar in a large mixing bowl; let stand 15 minutes, stirring occasionally.

Sprinkle gelatin over apple juice in a small saucepan. Let gelatin soften for 5 minutes. Cook over low heat, stirring occasionally, until gelatin dissolves.

Add gelatin fixture, celery, apple, and pecans to cranberries; mix well. Pour into a lightly oiled 4cup mold. Chill. Yield: 6 to 8 servings.

Cranberry tea punch

Count on this easy, thrifty refresher to toast a small gathering or serve a crowd.

2 1/2 cups boiling water

5 tea bags or 5 teaspoons loose tea

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup sugar

1 pint (2 cups) cranberry juice cocktail

11/2 cups water

1/2 cup orange juice

1/2 cup lemon juice

Pour boiling water over tea and spices. Cover and let steep 5 minutes. Remove tea bags, or strain. Add sugar; stir till dissolved; cool. Add remaining ingredients. Serve hot, or chill and serve over ice. Makes 6 to 8 servings.

Microwave cranberry sauce

1 bag (12 ounce) fresh or frozen cranberries

1-1/2 cups sugar

1 teaspoon cornstarch

In 2-quart microwave-safe casserole, combine all ingredients. Cook, covered, on high 8 to 10 minutes or until cranberries burst and sugar is dissolved, stirring twice during cooking. Remove cover and let stand until cool. Cover and chill until ready to serve.

If using frozen-fresh cranberries, increasing cooking time to 10-12 minutes. Makes approximately 2-1/2 cups.

Lite cranberry sauce

For Lite Cranberry Sauce, use 12-ounce bag or cranberries and 1/3 cup orange juice. Cook as directed above. When done, stir in 12-15 packets non-nutritive sweetener and 1 orange, peeled and chopped. Makes approximately 1-1/2 cups.

The sweet-tart, sophisticated flavor of this easily prepared ice makes it a perfect partner for your Thanksgiving turkey (and other holiday meats too).

1 1-pound can jellied cranberry sauce

1 7-ounce bottle lemon-lime carbonated beverage

Beat the cranberry sauce till smooth. Resting bottle on rim of bowl, slowly pour in lemon-lime carbonated beverage. Mix gently with up and down motion. Pour mixture into 1-quart freezer tray. Freeze till firm. Break into chunks with wooden spoon and place in a chilled bowl. Beat till fluffy. Return to freezer tray and freeze till firm. Makes 1 quart.

Cranberry-mince parfaits

1 3-or 3 1/4-ounce package vanilla pudding

1 packet whipped topping mix, whipped

3/4 cup prepared mince-meat, chilled

1 10-ounce package frozen cranberry-orange relish, thawed (or 1 cup homemade cranberry orange relish)

Prepare pudding according to package directions; chill. Beat smoot; fold in whipped topping. In 6 or 7 chilled parfait glasses, layer mincemeat, pudding, relish; repeat layers.

Put rind and pulp of 1 large orange and 4 cups cranberries through food chopper. Mix in 1 1/2 cup sugar; chill several hours in refrigerator. ,
