each winter, and returned to the garden in spring. Rosemary is used extensively with pork and lamb; it is also excellent in dumplings served with meats or chicken.
Tarragon is a shrubby plant that grows to about a two-foot height. The leaves are alternate, narrow, and pointed at the tips. Tiny round flowers bloom in July and August. Tarragon must be propagated from root cuttings, since true tarragon does not set seed.
The cuttings should be planted in the spring, to give the new plants a full growing season to become established before winter arrives.
The plants should be renewed. every three or four years. Tarragon has a very dominating flavor, so that it does not blend well with other herbs. It is an essential ingredient of sauce bernaise and of chicken estragon; it makes a superb flavoring for vinegar.
