Such options would make it much easier on area farms who would be hard pressed to afford the pasteurization process if they can afford it at all.
Even those farms which can afford pasteurization will likely see a cut in profit. The raw cider which they currently sell has a characteristic flavor for which it purchased. This flavor will no longer be present if they are forced to pasteurize the product.
