The interior of the form is then charred (to help the eventual flavor of the spirits, what else?)
The staves are moistened and another five hoops of varying diameter are hammered into place to form the distinctive finished appearance of the barrel.
To make the head of the barrel, five or six head staves are fitted together with wooden dowels.
The head is then cut to size and placed in grooves in the inside of the top and bottom of the barrel.
The newly distilled whiskey is placed in the barrels and allowed to age from three to 15 years or more.
The aging process is not completely understood but is definitely necessary to give the finished whiskey its distinctive properties.
Depending on the desired finished taste, old or new barrels may be used in the aging process with the former
