Mrs. Ronald Reagan’s Monkey Bread
1 large potato, peeled and diced
2 cups water
2 packages dry yeast
V4 cup shortening
Vi cup plus 3 tablespoons butter or margarine
3/4 cup sugar
1 teaspoon salt
2 eggs, beaten
6 cups flour
3/4 cup lukewarm milk
In saucepan, cook potato in water untO soft; drain and reserve Vi cup liquid. Dissolve yeast in reserved liquid. Mash potato. Cream shortening and Vi cup butter or margarine with sugar; add salt, potato, eggs and flour alternately with milk and yeast mixture. Cover and let rise in a warm place until light and double in bulk.
Divide dough in half. Roll out each portion on lightly-floured board to Vi inch thickness. Melt 3 tablespoons butter or margarine; brush on dough- Cut dough into diamond shapes about 2 inches long; place diamonds in layers in a greased tube pan. Fill pan half full; let dough rise until it almost fills the pan. Bake at 400 degrees for 30 minutes or until done. If it browns too fast turn heat down to 860 degrees.
