Raspberry Meringue Bara lVi cups flour 8/4 cup powdered sugar lVi sticks butter or margarine, melted 1 jar raspberry jam 3 egg whites 3/4 cup sugar Vi teaspoon cream of tartar 1/3 cup chopped pecans Blend flour, powdered sugar and melted butter; press into 12x9 inch pan. Bake 20 minutes at 350 degrees. Remove from oven and spread with jam. Beat egg whites until stiff, adding cream of tartar and sugar. Beat until glossy. Spread over jam layer, sprinkle pecans over meringue. Bake another 20 minuteB. Cool in pan before cutting. Store in airtight container. Pralines 2 cups sugar 1 cup buttermilk 1 teaspoon baking soda Dash of salt Vi stick butter 1V6 cups pecan halves Combine sugar, buttermilk, soda and salt in large, heavy saucepan. Bring mixture to full boil; let cook 5 minutes. Add butter and continue cooking until soft ball stage. Immediately add nuts, remove from heat and let stand exactly 80 seconds. Beat until mixture creams up and loses its gloss. Immediately drop by teaspoon onto buttered wax paper or foil.
